The ultimate comfort food, our frozen noodles are made fresh daily and immediately frozen, naturally preserving all of the nutrients and protein.  This process captures that freshly-made noodle taste that will transport your taste buds right on back to Grandma’s kitchen.

Mixing and Kneading

First we mix dry and wet ingredients separately and they feed into our original mixer.

Pressing

Once the dough is mixed it feeds into a large press that squeezes it through a large bronze die. That shapes it into this beautiful sheet. The bronze dies gives the noodles texture that help sauces stick.

Cutting & Shaping

This machine shapes and cuts the noodles to perfection. This is the original 1959 cutter assembly. Don't blink - this part happens fast.

Packaging

We hand weigh and inspect every bag and then ox them up for delivery! Once they are boxed they go immediately into our freezer to lock in their fresh noodle taste and texture.
